Last Thursday, I stared at a pack of ground beef in my fridge until my eyes actually blurred. I didn't want to form patties. I didn't want to stand over a splattering grill. I almost gave up and ordered a $35 fast-food delivery, but then I remembered I had cream cheese.
That is how this messy, highly satisfying cheeseburger casserole usually happens in my house. You basically brown some meat, dump everything into one baking dish, and let the oven do the heavy lifting.
It costs me exactly $9 to make this entire pan. The best part is that my kids actually eat it without picking anything out, which is a rare miracle on a weeknight.
I tried putting shredded lettuce directly into the casserole before baking it once. Do not do this. Hot, wilted iceberg lettuce is a tragedy. Keep the fresh stuff for a topping after it comes out of the oven.
Why This Saves My Weeknights

LAZY KETO CHEESEBURGER CASSEROLE
By Nora Quinn | healthyinsight101.blogspot.com
⏱ Prep: 10 min | 🔥 Bake: 20 min | 🍽 Serves: 6 | ⚡ Net Carbs: 4g
NUTRITION (per serving):
Calories: 410 | Fat: 32g | Protein: 25g | Total Carbs: 5g | Net Carbs: 4g
INGREDIENTS:
• 1.5 lbs (680g) ground beef (80/20 is best)
• 1/2 medium yellow onion, diced
• 2 cloves garlic, minced
• 4 oz cream cheese, softened
• 1/4 cup sugar-free ketchup
• 2 tbsp yellow mustard
• 2 cups sharp cheddar cheese, shredded (divided)
• Salt & black pepper to taste
TOPPINGS (your call):
• Chopped dill pickles
• Shredded iceberg lettuce
• Diced tomatoes
• A drizzle of extra mustard or sugar-free ketchup
INSTRUCTIONS:
1. Preheat your oven to 375°F / 190°C. Grease a 9x9 inch baking dish.
2. In a large skillet over medium-high heat, cook the ground beef and diced onion until the beef is fully browned (about 7-8 minutes).
3. Drain the excess grease from the pan. Leave just a little bit so it isn't completely dry.
4. Turn the heat down to low. Add the minced garlic, softened cream cheese, sugar-free ketchup, mustard, salt, and pepper directly to the beef in the skillet.
5. Stir everything together until the cream cheese melts completely and creates a thick sauce coating the meat. Stir in 1 cup of the shredded cheddar.
6. Transfer the entire meat mixture into your greased baking dish and spread it out evenly.
7. Top with the remaining 1 cup of cheddar cheese.
8. Bake for 15-20 minutes until the cheese on top is fully melted and bubbling around the edges.
9. Let it sit for 5 minutes before cutting. Top individual plates with pickles, lettuce, and tomatoes.
PRO TIPS:
- Drain the grease well. If you leave it all in the pan, the casserole will be a soupy mess.
- Grate your own cheddar. Pre-shredded cheese has anti-caking starches that add carbs and prevent it from melting smoothly.
- Never bake the pickles or lettuce. Keep those fresh for the top.
Prep your tools. Preheat oven to 375°F / 190°C. Lightly grease a 9x9 inch baking dish so nothing sticks.
2
Brown the meat. Cook the ground beef and diced onion in a large skillet over medium-high heat. Break it up with a spatula as it cooks. Keep going until the beef is fully browned, about 7-8 minutes.
3
Drain the grease. Carefully drain the excess liquid from the pan. Leave just a tiny bit behind for flavor, but get rid of the puddle. If you skip this, your casserole will be soup.
4
Make the burger sauce. Turn the heat down to low. Add the garlic, softened cream cheese, sugar-free ketchup, mustard, salt, and pepper directly into the beef. Stir until the cream cheese melts and coats the meat. Mix in 1 cup of the cheddar cheese.
5
Bake it. Transfer the meat mixture into your greased baking dish. Spread it flat. Sprinkle the remaining 1 cup of cheddar cheese evenly across the top. Bake for 15-20 minutes until the cheese is bubbling.
6
Rest and top. Let the dish sit for 5 minutes when it comes out. It needs a moment to set up. Serve portions onto plates, then pile on the fresh pickles, lettuce, and tomatoes.
💡 Pro Tip: Grate your own cheddar from a block. The pre-shredded bags from the store are coated in potato starch to keep them from clumping. That adds hidden carbs and makes the cheese melt weirdly.
❓ Questions I Get (Mostly From My Mum)
"Do I have to use sugar-free ketchup?"
Regular ketchup is basically tomato syrup. Just two tablespoons can easily blow your entire carb limit for the day. The sugar-free versions taste identical once they are baked into the meat, so just use that.
"Can I use turkey instead of beef?"
Yes, but ground turkey is very lean. You might need to add a tablespoon of butter or olive oil when browning it so it doesn't dry out. The flavor will also be a bit milder.
"How long do leftovers last?"
It keeps beautifully in the fridge for 4 days. When reheating, do not heat up the lettuce or pickles with it. Add fresh toppings after it comes out of the microwave.
The Mistake I Made With The Pickles
The first time I made this, I mixed the chopped dill pickles right into the ground beef mixture before putting it in the oven. I figured it would save me a step later. The result was incredibly disappointing. Hot, mushy pickles completely ruin the texture of the dish.
You absolutely need the contrast of the hot, cheesy beef against the cold, crisp pickles and lettuce. Keep your toppings separate until the very end.
⚠️ Watch The Ketchup Labels: Some brands advertise "No High Fructose Corn Syrup" on the front, but still use regular cane sugar. Always flip the bottle around and check that it explicitly says "No Sugar Added" or "Sugar-Free."
